INGREDIENTS
2 large carrots, grated
1 large egg
3 Tbsp buckwheat flour
1 Tbsp fresh mint, finely chopped
Salt and pepper to taste
Coconut oil, olive oil or butter for frying
METHOD
1. Lightly whisk the egg in a medium bowl. Then add the carrot, mint and seasoning and mix well.
2. Add the buckwheat flour and mix to form a lumpy mixture.
3. Over a medium heat, add the oil or butter and then add tablespoonfuls of the mixture and flatten them out with a spoon.
4. Cook about 2-3 minutes per side and if they get too dark, lower the heat. Continue until all the fritters are made.
TIP: If you add some extra oil/butter to the pan for each batch, they will get a bit more crispy. If you aren't a fan of mint, try another fresh herb like coriander, dill or parsley.
