Bacon Broccoli Salad

Great as a side or alone!

Ingredients:


2 large heads of broccoli
6 rashers streaky bacon
Olive oil
A punnet of cherry tomatoes
½ a bunch of fresh chives
DRESSING
½ a clove of garlic
2 tsp Dijon mustard
6 Tbsp extra virgin olive oil
2 Tbsp white wine vinegar

Method:

  1. Remove the broccoli florets and cut them into smaller ones.
  2. Boil a pot of salted water and blanch the broccoli florets in this quickly for 60 seconds, until the broccoli has softened but still has a bite.
    Drain the broccoli and dry well with a tea towel or paper towels. Add broccoli to a salad bowl.
  3. Dice the bacon and fry with a little olive oil until crispy/golden. Add bacon to broccoli.
  4. Add all dressing ingredients into a bowl, season and then whisk.
  5. Chop the chives and add these and tomatoes to the salad bowl with broccoli and bacon. Pour over the dressing and mix well. Make sure to taste test - it may need more vinegar or seasoning.

A lovely salad to enjoy alone or alongside roasted or grilled meat or fish.
