Katie's Oat & Nut Muesli Bars The Best Little Muesli Bar in Town This is a tried, tested and trusted recipe from Katie's childhood days. It came to be expected by her fellow schoolmates on all school camps and tramping trips! Great for lunch boxes!

Ingredients:

  • 4 cups rolled oats (1 cup can be replaced with your choice of a combo of nuts or other seeds)
  • 1 cup sultanas
  • ¼ cup skim milk powder (optional)
  • ½ cup honey or golden syrup
  • ¼ cup sesame seeds
  • 150g butter
  • 1 cup coconut
  • ½ cup raw sugar (can be replaced with coconut sugar if avoiding refined sugars)
  • ¼ cup sunflower seeds
  • 2 tbsp cocoa/cacao

Method:

1) Put dry ingredients in a bowl.
2) Place honey, butter, sugar and cocoa/cacao in pot and boil for 5 mins (Take care NOT to boil over the 5 mins or the syrup mixture becomes too hard).Mix thoroughly.
3) Pour syrup mixture into dry ingredients and mix with electric beater.
4) Press into a tin, and cut before putting in fridge to set.
