Chocolate Chia Seed Pudding

Try this healthy dessert pudding!

Ingredients:


  • 1/2 cup chia seeds
  • 2 cups full fat coconut milk or cream
  • 2 Tbsp cacao or cocoa powder
  • 1 Tbsp raw honey (or equivalent stevia to taste)
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Cacao nibs, toasted nuts or blueberries to garnish.


Method:


  1. Whisk cacao/cocoa powder into coconut milk/cream.
  2. Stir in all the other ingredients.
  3. Pour into glass bowl or 4 serving glasses.
  4. Cover and refrigerate for 4-8 hours.
  5. Sprinkle with cacao nibs, toasted nuts or blueberries and serve.
