INGREDIENTS
3-4 bananas, cut into ½cm thick slices
¼ cup almond or peanut butter
280g dark chocolate, chopped into pieces
2 tbsp coconut oil
2 tbsp ground almonds
Toothpicks
METHOD
1. Line a baking tray with baking paper, make sure it will fit in your freezer.
2. Lay out the banana slices on the baking tray and spread nut butter over half of the banana slices. Then add another banana slice on top of the nut butter coated slices and insert a toothpick into the centre to make sandwiches. Store these banana slices in the freezer for 2 hours.
3. Once the slices are frozen, melt the coconut oil and chocolate slices in a stainless steel bowl in a pot of simmering water. Stir to combine.
4. Dip the banana sandwiches into the chocolate until they're covered and then dip into the ground almonds and place back on the baking tray. Repeat until all are chocolate coated and then put back into the freezer for another 2 hours.
