Corn Fritters

Quick and easy, great for snacks.

Ingredients:


  • 3 cups fresh, canned or defrosted corn kernels
  • 2 eggs
  • ½ tsp curry powder
  • ½ tsp baking soda
  • ½ cup rice flour
  • 1 spring onion, finely chopped
  • Sprinkle of chilli flakes (optional)
  • Salt & pepper to taste
  • Olive oil or coconut oil to fry


Method:


  1. If you are using raw corn kernels, place in a pot and cover with boiling water and stand for 3 minutes before draining.
  2. Place half the corn in a food processor.
  3. Add eggs, spring onion and blend to a rough puree.
  4. Add chilli, curry, soda, rice flour, salt/pepper and pulse until the mixture is a batter.
  5. Stir in the remaining corn.
  6. Heat oil in a frying pan and add heaped tablespoon dollops of mixture to pan cooking over medium heat.
  7. Cook until golden brown and cooked through (this should take about 2-3 mins each side).


Great served with an Avocado Salsa!
