Easy Peasy Yummy Buckwheat, Banana & Date Loaf

Just combine everything and bake!

loafThis truly is the easiest and quickest loaf to make. You literally throw all the ingredients into your blender and boom - ready to bake! This loaf is very moist and naturally sweet, filled with fruit. Its gluten and refined sugar free, so therefore guilt free. A lovely addition to a cup of tea, in a packed lunch, or just because its treat time.

Ingredients:



  • 3 ripe medium bananas
  • 150g stone-less dates, roughly chopped
  • 75g butter cubed (room temperature - you can substitute coconut oil or similar if you are dairy free)
  • 50g maple syrup or honey (optional because this loaf is naturally quite sweet)
  • 3 eggs
  • 3 tsp lemon juice
  • 1 tsp vanilla paste or extract
  • 1 tsp ground cinnamon
  • 1 tsp ground allspice
  • 250g buckwheat flour
  • pinch of salt
  • 2 tsp baking powder
  • 100ml hot water
  • 200g sultanas (or raisins)

Instructions:



  • Pre-heat oven to 180 degrees and line loaf tin with grease proof baking paper
  • Add all of the ingredients in order into a blender
  • Blitz all the ingredients together in a blender (except for the raisins), blend for about 30 seconds, until well combined.
  • Fold in the raisins by hand at the end of the mixing process until evenly distributed throughout the mixture.
  • Pour the mixture into the lined loaf tin and cook for approximately 45 min to 1 hour
  • OR until a skewer inserted into the middle of the loaf comes out clean
  • Remove from tin and cool on a wire rack
