Egg & Potato Salad

Easy to add to any meal as a side.

INGREDIENTS:

  • 6 hard-boiled eggs - diced
  • 5 boiled potatoes - cubed
  • 3 heaped tbsp mayonnaise
  • 3 heaped tbsp sour cream
  • 1 heaped tsp whole grain mustard
  • finely diced spring onion OR chives
  • pepper & salt to taste


METHOD:


Mix the mayonnaise, sour cream and mustard together and combine with the rest of the ingredients. Chill in the fridge for an hour prior to serving to allow all the flavours to comine. Enjoy.
