Goulash (Slovenian style)

Serve on mashed potato or polenta.

Ingredients:


  • 2 large onions, finely chopped
  • 3-4 cloves garlic, crushed
  • 1 bay leaf
  • 1 heaped tablespoon paprika
  • 2 finely diced carrots
  • 700g diced beef (cut ideal for slow cooking)
  • 1 tin of chopped tomatoes
  • a few tablespoons passata (optional)
  • 1 cup of water (more or less depending on consistency you prefer)
  • Pinch of chilli (or more, as your taste prefers)
  • salt & pepper to taste


Method:


  1. Saute onions and garlic until clear and fragrant, then add diced beef and brown.
  2. Add pepper, salt, paprika and continue stirring for a few minutes until all combined. Then add carrots, and the rest of the ingredients and stir well.
  3. Slowly bring to the boil and then basically you just simmer the mixture in a large pot, covered, for at least 3-4 hours. The longer you cook it the more tender the beef will be.
  4. Taste test throughout the cooking process, it may need extra water if you prefer a more liquid consistency, or it may need extra salt or paprika for flavour.

Lovely served on a bed of polenta or mashed potato!
