Grilled Haloumi and Vegetable Salad

A delicious vegetarian recipe!

Ingredients:


1 eggplant, sliced into 1cm thick rounds
2 courgettes, trimmed and sliced lengthwise
1 bunch asparagus spears, trimmed
2 red capsicums, deseeded and cut into pieces
100g Haloumi cut into slices
8-10 cherry tomatoes, halved
DRESSING
3-4 Tbsp Balsamic Vinegar
3-4 Tbsp olive oil
salt to taste
Fresh basil leaves

Method:

  1. Once cut and prepared, brush all vegetables with olive oil, season with salt and pepper and BBQ / grill until vegetables are tender.
  2. Place haloumi slices on the BBQ / grill until golden.
  3. Place vegetables, haloumi and fresh tomatoes onto a platter
  4. Mix dressing ingredients together and drizzle over the platter
  5. Garnish with fresh basil leaves
