Ingredients
Serve this refreshing, tasty dip with home made pita chips and freshly cut vegetable sticks such as cucumber, capsicum and cherry tomatoes.
1 block (200gm) of quality feta, drained (soft feta, not crumbly)
¾ cup Greek yogurt
1 lemon zest
2 tablespoon extra virgin olive oil, more as needed
Optional toppings:
Extra olive oil
Chopped nuts such as pine nuts or crushed pistachios
Freshly chopped herbs such as mint or parsley
Method
1. Combine everything in a food processor while drizzling the olive oil in the top while it is running. Transfer the whipped feta to a serving bowl or dish, smooth it over with the back of a spoon and make an indentation into the middle creating a small well. Here you can add optional toppings such as: a drizzle of olive oil, chopped nuts such as pine nuts, crushed pistachios, mint or parsley.
