Quinoa Tabbouleh

A light and easy salad.

Ingredients:

  • 1 cup cooked quinoa
  • 1 medium tomato, finely chopped
  • 1 cup parsley, finely chopped
  • 1/2 medium red onion, finely chopped
  • 2 tablespoons extra virgin olive oil
  • Juice from 2 lemons
  • Sea salt to taste

Method:


  1. In a large bowl mix the cooked quinoa, tomato, red onion and parsley.
  2. Mix in the olive oil and lemon juice and add salt to taste.
