Summer Spritzer & Pineapple Popsicles

Two great cooling summer recipes!

Summer Spritzer - a refreshing summer drink that doubles as a nutrient boost!

Ingredients:

  • 2 oranges
  • 1 lime
  • 3 cm (1 inch) piece fresh ginger
  • 3 cm (1 inch) piece fresh turmeric
  • 1 tbsp coconut sugar (optional)
  • 1 bottle chilled sparkling mineral water

Method:


  1. Juice citrus fruits, ginger & turmeric.
  2. Mix in coconut sugar.
  3. Serve mixed with mineral water & extra fruits if desired.


Pineapple Popsicles - just two ingredients makes these popsicles easy and delicious!


Ingredients:

  • 1 cup fresh pineapple, pureed
  • 2 cups plain coconut water

Method:


  1. Fill each popsicle mold 1/3 of the way with the pineapple puree.
  2. Fill the molds the rest of the way with the coconut water.
  3. Using the handle of a spoon, stir the mixture gently inside each mold.
  4. Insert the handles or popsicle sticks into the molds.
  5. Freeze for at least 4 hours.
  6. To serve, run the molds under warm water for 15 seconds to slide the popsicles out of the molds
