Zucchini noodles

Serve topped with pasta sauce.

Ingredients:

  • 3 zucchini (courgette), medium sized
  • 1-2 tablespoons olive oil
  • Salt and pepper to taste
  • 1-2 tablespoons pesto (optional)


Method:


  1. Wash and cut both ends off the zucchini.
  2. Then either cut length ways into long thin noodles or use a Julienne peeler to do the hard work for you.
  3. Lightly sauté zucchini noodles in olive oil on a medium heat.
  4. Add salt and pepper to taste and serve. You can also add pesto before serving.
  5. Alternatively serve them raw with a warm pasta sauce over top.
